Inspired by the growers and producers of Niagara, AG’s FeastON certified menu utilizes regional and seasonal ingredients, brought together by the inventive hand of executive chef, Cory Linkson. Beautifully designed, unique, and delicious dishes are crafted to satisfy the palate, while remaining true to the very essence of the ingredients. It truly is inspired cuisine. To meet the restaurant’s commitment to staying local, ingredients are grown on the AG Farm or sourced from regional suppliers. Dishes are planted, picked daily and produced to deliver the freshest and most authentic local flavours. These ingredients inspire daily changing menus that celebrate the seasons. Even the restaurant’s signature “Rub” is made from dehydrated vegetables from the AG Farm that are ground and custom-blended. The farm-inspired menu includes honey from the new AG Busy Bee Honey Factory. AG also proudly features an extensive local Niagara VQA wine list and a variety of local Niagara craft beers. AG Inspired Cuisine uniquely reverse engineers their dishes by beginning with the local wine selection and matching the food to its notes.

Executive Chef Cory Linkson brings with him more than 20 years of culinary experience to AG in Niagara Falls. After graduating and receiving his chef's certification, Chef Linkson honed his skills while traveling from coast to coast and working in some of our countries most prestigious kitchens. Stops along the way include the Emerald Lake Lodge in the Canadian Rockies to the famous Chateau Montebello in Quebec's Eastern Townships. It was during this time that Linkson discovered the beauty of seasonal, regional cuisine and the importance of sourcing artisnal products. The White Barn Inn, a Relais Gourmand property in Kennebunkport, Maine continued that culinary trend with its focus on the bounty of New England's Eastern Seaboard. After returning to his roots in Niagara, Linkson developed and nurtured his techniques for cooking by the seasons. A culinary revolution was taking place at home and Chef Cory was at its forefront. For the next ten years as Sous Chef at Hillebrand Estates Winery and Executive Sous Chef at Peller Estates, Linkson helped develop the Wine Country Cuisine that we now know. The relationships built in those years with farmers and producers continue today. This appreciation for what the earth gives us is and always will be the core of his cuisine. Cory's cooking style is steeped in Classical French technique with a contemporary regional and seasonal sensibility. It is a style that allows the best quality ingredients to stand on their own merits.

AG Inspired Cuisine is part of the Sterling Inn and Spa, a boutique hotel opened in 2007, located in what was once the Borden Dairy Factory (1930s-1974). Steeped in history, this facility’s transformation of architectural heritage is an excellent example of sustainable conservation, enabling residents and visitors of Niagara Falls, Ontario to enjoy the award-winning hotel and restaurant standing today.
