Niagara's Icewine Harvest has Now Begun
With temperatures, dropping to below -8 C Niagara’s annual ice wine grape harvest has now began.
Icewine is made by leaving grapes on the vine when the cold hits. The grapes then dehydrate as the water inside them freezes, leaving a sugary nectar that is extracted.
Because of a warmer December and early January, the harvest will be less than other years. However, icewine makers say the icewine from this crop will usually taste better than previous years.
